How to Make Sweet Potato the Mediterranean Way

If you’re looking for a simple, healthy new side dish at your dinner table, look no further than this Mediterranean sweet potato. It has all the fixings and flavors of one of the most popular cuisines in the world — roasted sweet potatoes covered in olives, feta cheese, and garlic topped with a drizzle of lemon juice. This recipe couldn’t be more flavorful or easy to prepare.

Ingredients
  • 5 medium size potatoes
  • 1.25 cup chickpeas ((rinsed and drained))
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 coriander
  • 1 cinnamon
  • 1 paprika
  • 1 pinch salt
  • GARLIC HERB SAUCE
  • 1/2 cup hummus
  • 1/2 lemon yields
  • 1 tablespoon lemon juice
  • 1.25 teaspoon dried dill
  • 3.75 cloves garlic (minced)
  • Water
Instructions
  1. Preheat the oven to 400 degrees Fahrenheit (204 degrees Celsius) and cover a wide baking sheet with aluminum foil.

  2. Potatoes should be rinsed and scrubbed before being sliced in half lengthwise. This will reduce the amount of time it takes to cook. Otherwise, leave whole and bake for a longer duration (approximately 45 minutes – 1 hour).

  3. Place rinsed and drained chickpeas on a foil-lined baking sheet and toss with olive oil and spices.

  4. Apply a light coating of olive oil to the sweet potatoes and put them face down on the same baking dish (or another baking sheet depending on size).

  5. When the sweet potatoes and chickpeas are roasting, make the sauce by whisking together all of the ingredients in a mixing cup, only adding enough water or almond milk to thin it out enough to pour.
    Season to taste and change seasonings if required. Add more garlic for a zingier taste, salt for savory flavor, lemon juice for brightness, and dill for a stronger herb flavor. I discovered that mine didn't need any additional supplies.

  6. To make the parsley-tomato topping, toss the tomato and parsley with the lemon juice and leave to marinate.

  7. Remove from oven when sweet potatoes are fork tender and chickpeas are golden brown, around 25 minutes.

  8. Flip the potatoes flesh-side up and lightly crack the insides before eating. The chickpeas, garlic herb sauce, parsley-tomato salad, and chili garlic sauce are then added on top (optional). Serve right away.
