Mediterranean Grilled Chicken Salad with Avocado

The Chicken Salad with Avocado is a fresh and light second course, ideal for a summer lunch or for a lunch break at the office.

Those who prefer can cut the chicken breast into bite-sized pieces and cook them in a pan with a drizzle of extra virgin olive oil.

Instead of the ginger sauce, you can prepare a yogurt sauce: mix in a bowl, 100 g of Greek yogurt, 2 tablespoons of extra virgin olive oil, 1 tablespoon of lemon juice, salt, and chives.

To add a crunchy note to your chicken and avocado salad, you can add pumpkin or sunflower seeds, or dried fruit such as almonds, walnuts or pistachios.

Serve the chicken and avocado salad with croutons or with rice or spelled, to create a unique dish.

In addition to avocado, you can also add mango and raisins, which go perfectly with chicken.

You can also enrich the chicken and avocado salad with raw ham, soft cheese, and hard-boiled eggs.

Alternatively, you can use avocado to make the guacamole sauce and serve it directly with the chicken salad, cherry tomatoes, and salad.

How To Keep Avocados Green?

It is never pleasant to serve withered food at the table, even if it is still eating well. Avocado is one of those foods that darken quickly, even when stored in the refrigerator. Discover our tips to keep it green for longer.

If you want to keep your avocado green for longer, don't get rid of its pit! So, when you only need half an avocado, prefer to keep the part that still has the pit. It also works with avocado recipes, like salad or guacamole. In this case, simply place the avocado core at the center of your preparation. It works! Remember to remove it when ready to serve, to avoid any unfortunate incident.

You can also prevent the cut avocado from darkening by gently covering it with a drizzle of lemon juice. If this method is undeniably successful, it has the disadvantage of adding acidity to the avocado, which is not always welcome. For the rest, the lawyer will now be your best ally!
