The Original Recipe of Venetian Liver

  • 600 grams veal liver (cut into thin slices)
  • 500 grams white onions
  • 3 tablespoons extra virgin olive oil
  • 30 grams butter
  • 1 tablespoon broth (or meat sauce, optional)

  1. Wash the parsley, dry it gently and chop it
  2. Cut the onions into thin slices.
  3. Put a pan on the fire and add oil and butter

  4. When the fats fry, add parsley and onions, stir, cover with the lid and cook over low heat for about an hour

  5. After about an hour, add the lightly floured liver, turn up the heat, stir and add a few tablespoons of broth or sauce.

  6. When the liver is cooked (about 5 minutes), remove the pot from the heat. Salt system. Put the liver with the onions in a plate add croutons and accompany if you want with polenta or mashed.
