If you’re looking for a quick-and-easy dinner recipe that’s healthy, but also really filling and satisfying, these Mediterranean chicken kabobs are definitely the way to go. They’re easy enough to prepare in under 30 minutes, but will taste just as good as anything you’ll get at your favorite restaurant. It’s great to be able to serve a lot of people at the same time with this recipe – just put them over a bed of rice or couscous, and let every guest place a skewer on their plate.
We love serving these kabobs with some simple Greek salad and tzatziki sauce on the side, but I’m sure they’d go well with some cooling cucumber yogurt dip as well. You can make a wide range of kebabs, including chicken, lamb, beef, pork, and veal. Cooking food on a stick, no matter what kind of kebab you make, is a fun and quick way to prepare a tasty meal.

Marinate for maximum flavor!
Want to inject a good dose of flavor into your chicken? Prepare a flavored marinade with wine, beer or juice, then let the chicken marinate in the fridge for at least two hours in this marinade. Sage, basil, chervil, tarragon, cilantro, oregano and thyme are among the herbs to favor for this favorite meat. As for spices, star anise, curry, nutmeg, paprika and ginger go perfectly with chicken.
A tender, chewy flesh
To preserve the tenderness of the flesh, simply slip a few knobs of plain or flavored butter (herbs, garlic, etc.) under the skin of the chicken before roasting it on the grill. Another option: immerse your cuts in buttermilk (buttermilk). The acidity of the latter, combined with the enzymes and calcium it contains, will keep the flesh tender and moist during cooking. On the skewers, thread the chicken, peppers, and onions. I normally put around 5-6 chicken pieces between each other, with a mix of peppers and onions in between.

Over medium-high heat, preheat an outdoor grill or an indoor grill pan. Grill for around 5 minutes on either hand, or until the middle is no longer yellow, spraying the grates gently with oil.

If you like, you can bake these Mediterranean chicken skewers in the oven. Preheat the oven to 425 degrees Fahrenheit. Place chicken skewers on roasting racks over two foil-lined baking sheets and bake for 10-15 minutes, turning once, until cooked through.
The Marinade

In a small bowl, combine half of all marinade ingredients. Place the chicken in a ziplock bag and add the marinade. Refrigerate for at least 30 minutes after marinating.

In the same bowl, combine the other HALF of the ingredients and dump into a ziplock bag with the vegetables. Allow at least 30 minutes for marinating.

If you're using wood skewers, soak them in water for about 15 minutes as the chicken and vegetables are marinating. To prevent wooden skewers from spontaneously igniting on the barbecue, soak them in water for 20- 30 minutes. I've also found that soaking the skewers before grilling makes it much easier to slip the meat and vegetables onto the pan.
