Preheat oven to 450 degrees F. Coat 12-inch skillet or 9 x 13 baking dish with nonstick cooking spray and set aside.

Place chicken breast halves between sheets of plastic wrap and pound to 1/4-inch thickness using the flat side of a meat mallet or rolling pin.
