  1. Preheat oven to 450 degrees F. Coat 12-inch skillet or 9 x 13 baking dish with nonstick cooking spray and set aside. 

  2.  Place chicken breast halves between sheets of plastic wrap and pound to 1/4-inch thickness using the flat side of a meat mallet or rolling pin. 

  3. Remove plastic, being careful not to tear it, and sprinkle with salt and pepper.

  4. Dredge both sides of chicken in lemon zest.

  5.  Heat oil in a skillet over medium-high heat until hot, but not smoking.

  6. Add garlic and stir just until fragrant (about 30 seconds).

  7. Add chicken and cook for 6 minutes per side, or until cooked through and golden brown.

  8. To make the sauce, combine yogurt and basil; spoon over cooked chicken breasts or serve in a small bowl at the table.
